Michael came home from work last night with a beautiful bouquet of dark red roses.
He took me out to dinner for my birthday at the Bambara restaurant in Salt Lake, it was so romantic. It was a perfect night spent with my two boys!

New Mexico Triathlon
Michael, I and the boy drove 7 1/2 hours down to New Mexico for another one of the Xterra triathlons. Ziggy was so funny in the car. Instead of sprawling out in the backseat, he would rather be right by us and be a lot more uncomfortable. He was a good boy though, it was fun to have him with us this time. This triathlon was limited to 150 people because of the regulations regarding Farmington Lake. Michael did so well in this tri, he got "1st place" in his division and 46th out of 150. There is something so exciting about these races, it is such fun atmosphere. I am so proud of you baby! The last picture of Zig makes me laugh, he is one funny dog.
Las Vegas Triathlon
Michael and his friend Chris both did the triathlon in Las Vegas over the first weekend in May. They both said it was the most grueling one they have ever done. The bike and run was straight uphill, and mostly sand. It was a fun weekend spent celebrating Michaels birthday and hanging out with Chris and Erin.

Whole Wheat Waffles
I came across this recipe and thought I would give it a try. Turns out it is incredibly delicious, so I thought I would share. Best thing about it?... it is super healthy. :)
Whole Wheat Waffles
1 cup whole wheat flour
2 T. wheat germ
3/4-1 cup nonfat milk
2 egg whites
1/2 t. baking powder
3 T. brown sugar
1 t. vanilla
dash of salt
This recipe makes about 4 whole waffles, so about enough for two.
I have doubled it and it turns out just as good.
