Our Anniversary

Our "Two Year" Anniversary was on March 14, 2010. It happened to fall on a Sunday, so we decided to celebrate the night before. Michael cooked up some delicious Salmon and we exchanged gifts. Michael got me a bouquet of flowers and Tory Burch shoes that I've been dying to have. He's such a sweetie. I'm completely and utterly in love with this guy and the luckiest girl in the world to have him.

St. George icup

This past weekend we headed to St. George for the intermountain cup bike race. Michael had never done any of the icup races before, so he decided to sign up under "expert."
That's my boy :) As you can see in the pictures, Michael was the first to take off in his pack. He had three 6 mile loops to complete, but when he got to the top of the first one his ankle gave out.
Let's rewind back a few weeks when he was playing church ball and twisted his ankle. He tore several ligaments in his ankle, but decided to still attempt this race. Unfortunately, during the race his ankle did not cooperate and he had to drop out. He was not happy, but did not let it get to him for the rest of the weekend (surprisingly). He was such a good sport about it, but honestly, I was somewhat glad he couldn't finish {no offense, honey}. I prefer being a spectator at the Xterras; they are so much more exciting! After he took off on the bike, I stood around for a few minutes and realized it would be about 35 minutes before I'd even see him again, and at that, for just a few seconds. This is why I decided to head to the car and write a paper for one of my classes.
Needless to say our weekend didn't turn out quite liked we had hoped, but it was fun nonetheless. We grabbed some ice cream after the race, who can be upset eating Baskin Robbins? (by the way- Blue Bunny ice cream store in St. George is no longer in business... definitely my disappointment of the trip). It was nice to get outside and have the sun beating down, it was sooo wonderful!

...I'm itching for Spring.

*Valentines Weekend

I had just gotten home from school Thursday night when Michael walks in the door. Go into a room and shut the door, he says. I hear him messing with a few things in the kitchen and when he okayed that I could come in, I see a beautiful bouquet of flowers in his hands. He had bought a bunch of flowers and arranged them himself, he's so artistic. He said, "I thought I'd give them to you early, so you could enjoy them over the weekend," and I have done just that. Any girl who says flowers are over-rated is lying, because they are simply the best. I love flowers...especially for Valentines. I ended up giving him his Valentines early because I couldn't wait. I made him a little basket full of little goodies from FAO Schwartz. He loved it.



We decided to celebrate Valentines on Saturday. We went to breakfast at Park Cafe with a few friends, went to see the movie "Valentines Day," and then went to dinner at Cucina Toscana that night. Michael made reservations a few weeks ago and I had been waiting to go there ever since. It is an Italian restaurant just East of Gateway, and it is to die for. The last time we went there was the night we got engaged.


I've decided that Michael is a romantic. I love it.
This past weekend couldn't have been any better.
Sharing Valentines with the one you love is as good as it gets.

~Paella~

Michael and his buddies went to Jackson Hole to ski this past weekend. I thought that perhaps I might be a bit lonely, so I invited my nephews and mom to sleepover Friday night. Then Saturday, after a much needed nap, Jessica came to my house! We cooked Paella; something we've been wanting to do for a while now. Jess came with a recipe, and to our surprise it turned out perfectly and was absolutely delicious. Paella is a traditional Spanish meal. The key to this delightful dish... add more {Safron: an expensive spice that makes all the difference}. After dinner we went to the movie "Dear John." It was so fun to spend a night with my sis-in-law! We'll have to do it again soon :)

Can I Be Honest?

This weather is really getting me down.
I have no motivation.
School is kind of a drag this semester,
why is this?
I'm really not trying to be negative,
but I need some sun.
This is really the first winter where I've wondered,
Why do I not live someplace warmer?
I've been taking a Vitamin D supplement,
But I'm afraid I need the real thing.
Please, no more snow.
Sun, I need you so badly, this is true.

While the cat's away...

...the mouse (referring to me) will make treats! I haven't had/made muddy buddies in forever, so I thought it was about time. They are yummy. While Michael is attending night school, I often find myself looking for something to do. Sometimes I will make treats to surprise him when he gets home. He probably wishes I would make some "real" food once in a while, but I am learning. Unfortunately, that is my weak spot. One of my goals for this year; to learn to cook healthy delicious meals for two! If anyone has any ideas or good recipes to try, I would be ever so grateful :)
